On the 3rd Day of Christmas: Pomegranate Avocado Salsa Recipe

My friends. I have finally found a recipe that will complete your life. You haven't experienced true joy if you haven't tried Pomegranate Avocado Salsa. I can't mail it to you, but I can give you the recipe:

5 medium avocados, diced
1 fistful of Cilantro, chopped
1/2 onion, finely chopped
1-2 limes, fresh squeezed
Salt and fresh ground pepper to your liking
1/2 to 1 whole pomegranate, seeded

Gently mix together in a bowl. You can also mash all ingredients and add the pomegranate seeds at the end to make a guacamole dip.

Enjoy with white corn tortilla chips!

  1. oooooh! i LOVE that i can eat every single thing in your recipe!!! (that's huge, considering my stupid allergies & celiac.) i may not be able to eat the corn chips (again with the allergy thing), but this sounds so yummy that i'd be MORE than willing to gobble it down by the spoonful! thanks for generously sharing this gem. i'm off to the grocery store later this morning! ::hugs::

  3. Another tradition: We do Mexican on Christmas Eve every year and this recipe totally fits, even with a little twist. I'm always looking for new unique recipes to try and I'm definitely putting this one in the mix this year. Thank you!
